Tauco is a traditional Indonesian condiment made from fermented soybeans. It adds a rich umami flavor to various dishes. Follow this step-by-step guide to make your own tauco at home.

- 2 cups of soybeans
- 2 tablespoons of salt
- Banana leaves (for wrapping)
- Water

Step 1: Cleaning the Soybeans Begin by thoroughly cleaning the soybeans under running water to remove any impurities.

Step 2: Soaking the Soybeans
Place the cleaned soybeans in a large bowl and cover them with water. Let them soak overnight to soften.

Step 3: Draining and Grinding
After soaking, drain the soybeans and grind them into a coarse paste using a food processor or blender.

Step 4: Salting the Paste
Transfer the ground soybeans to a bowl and add salt. Mix well until the salt is evenly distributed.

Step 5: Wrapping the Mixture
Divide the mixture into small portions and wrap each portion in banana leaves. Ensure they are tightly wrapped to aid the fermentation process.

Step 6: Fermentation
Place the wrapped soybean portions in a cool, dark place for fermentation. Leave them undisturbed for about 5-7 days, depending on the desired level of fermentation.

Step 7: Checking the Fermentation
After the specified time, check the tauco. It should have a distinct, pleasant aroma, and the color will have darkened.

Step 8: Sun Drying (Optional)
For added preservation, you can sun-dry the tauco by exposing it to sunlight for a day. Ensure it is covered to protect it from dust and insects.

Step 9: Storing
Once the tauco is ready, store it in an airtight container in the refrigerator. It can be kept for several months.
